We had a great time this weekend! On Saturday evening around 18 members of the Dominican Republic mission came over for dinner and to share memories, stories and photos of their recent trip. For 8 days they had shifted sand, mixed concrete and taught a Vacation Bible School to 120 children! So, it was time to celebrate their homecoming.
I put together an easy menu that had a little something for everyone...Low Country Boil, Beef Sliders with pepper jelly BBQ sauce, broccoli slaw and homemade pickles. Several others added to the spread by bringing deviled eggs, potato salad, pasta salad, fresh watermelon and key lime pie. We had a feast! It was a fun night with a great group of people who now have a special bond because of their mission experience. I am so proud of my son for being a part of it and know his life has been changed forever.
Low Country Boil
5 lbs of small new potatoes4 lbs of sweet onions - halved
4 packages of smoked kielbasa cut into 2 inch pieces
12 ears of corn - broken into halves or thirds
6-8 lemons - halved
5-6 lbs of shrimp
3/4 cup of Old Bay Seasoning
Fill large pot about 3/4 full of water, place on an outdoor cooker and bring to a boil.
Turn to a med-high heat. Add Old Bay Seasoning and mix into water.
Gently place potatoes into pot - cook 10 minutes.
Add corn, sausage and onions - cook for 5 minutes.
Squeeze lemons and add to pot along with shrimp - cook for 3 to 4 minutes.
Drain liquid and dump boil onto a table covered in newspaper.
Have a little melted butter and horseradish sauce on hand....grab your favorite drink and dig in!
