Monkey Bread Bites and a Tuesday Tip

Written By Unknown on Tuesday, September 18, 2012 | 7:15 AM

Well, y'all, I've kinda gotten myself in a fix because, a couple of days ago I shared that I'd be bringing you some "healthy" breakfast recipes.  I am, I promise, but this past weekend I needed to go old school and pulled out an oldie but goodie with a little twist.  I made Monkey Bread with a Pinterest twist.  I'd seen a couple of pins about taking the traditional cinnamon biscuit recipe and making it into something different.  I couldn't resist giving it a try and after all, the boys had been helping out in the house and yard, so of course, they needed a little treat!  I gave it a go and just like the old standby money bread, the new, little bites were consumed in minutes.  I got my Pinterest fix and the guys got something yummy.  It was all worth it.
Start with the goodies - notice how I used the healthy canned biscuits so that I could add the Karo Syrup.  That's how I roll...
Ingredients
12 biscuits
6 tablespoons butter, melted
2 tablespoons corn syrup
½ cup brown sugar
2 teaspoons cinnamon

Cut each biscuit into 6 equal pieces. In a bowl, combine butter and corn syrup and stir until well mixed. In another bowl, combine sugar and cinnamon and mix well. Dip 6 roll pieces at a time in the butter mixture and then in the sugar mixture. Place 6 pieces in each well sprayed cup of a 12 cup muffin tin. Repeat with remaining roll pieces. Bake at 350°F 15-20 minutes. Cool 3-4 minutes before removing from pan.
When the "bites" come out of the oven, turn them upside down so that the Carmel runs into the muffin.
Now, drizzle on the glaze...
Ingredients
1 cup powdered sugar
2 tablespoon of milk

Finish with a little dusting of powdered sugar, just for the heck of it!

BUT WAIT....
Since it's Tuesday...Here's a Tip!
Next time you need bacon, cook it on the grill!   I love using this method because it cuts down on grease splatters, smell and clean up.  I use a heavy grill pan just because I "need" to keep a little bacon grease for other recipes.  If you don't have a grill pan, it's no but deal, just put the bacon on the grates but make sure you watch the temperature.  If the burners are up too high, your pig is gonna burn quickly.  Give it a try... it will be your "go-to" method from now own...even when the weather gets chilly!
I load up the pan...a pound or two of bacon at a time.  With the right temperature and just a little time,
This is what you get!

Have a yummy Tuesday....
