It's a happy, happy Friday around here! Last evening we had some really nasty storms roll through the area and that's never an enjoyable thing. It was just me and my youngest guy here, so we decided the best way to ride out the storm was to gather some good reading material, and snuggle in with a chocolate cookie or two. I pulled out this tired and true recipe and within 20 minutes I had cookies! I made a couple of changes to suit our taste and they turned out great.
I am very, very thankful that the storms moved quickly through the area and we were spared any damage to our home. I am also thankful that today the sun is shinning, the birds are chirping and the flowers are blooming. It's going to be a great weekend and I am counting my blessings...
Chocolate Oatmeal NO-BAKE Cookies
2 cups sugar
4 tablespoons cocoa
1 stick unsalted butter
1/2 cup milk
Pinch of salt
2 tablespoons almond butter (peanut butter can be used as well)
1 tablespoon vanilla
3 1/2 cups oatmeal
- Heat butter, sugar, cocoa, salt and milk in a medium size pot.
- Bring to a boil and cook for 1 minute.
- Add vanilla and almond butter.
- Add oatmeal and mix well.
- Scoop or spoon cookies onto parchment or waxed paper to cool.
Notes ~ I substituted almond butter because my son does not like peanut butter. We really liked the flavor from the almonds. I increased the amount of oatmeal by 1/2 cup from the original recipe because I found the mixture to be too loose. You may want to start with 3 cups and add more if necessary.
