Big Bro Creed has a buddy (all of 6'4") over and guess what? THEY ARE HUNGRY! Didn't I just stop cooking about 30 minutes ago and close the kitchen? Funny thing is, I actually asked them that question...."are you guys hungry?" What was I thinking? Oh well, being a "cooker girl" and lovin' me some boys, I got in the kitchen - acted like I was mad (talked to myself a little, banged around and seemed disgusted) then came up with a homemade snack for the big boys. I decided to make nachos.
I had flour Tortillas on hand, so I cut them into triangles and placed them on a baking sheet sprayed with oil. Then, I sprinkled on salt, garlic powder, cumin and smokey paprika, baked at 400 degrees for about 6 minutes until they were light brown.
When the timer hits about 3 minutes the smell of all those spices will creep throughout your house so expect your family and others to start coming into the kitchen to make friends with you. They will ask questions like - "Hey, Mom, how's your day going? Hey, Mrs. Mullins, is there anything you need help with?" Hmmm, really? Well, actually, that's when MY glow starts....I know that I am making somebody happy. OK, back to the food - take the chips out of the oven to cool. They will crisp up even more while they do so. I usually make 2 sheet pans at a time and pile all the chips onto one for the final baking. While the chips were cooling, I made some salsa. I had some ripe tomatoes and a couple of jalapenos from the farmers market so...

- 1/4 of a videlia onion chopped fine
- 1 medium jalapeno pepper chopped fine
- 2 medium tomatoes chopped
- about 2 Tablespoons of fresh cilantro or parsley minced
- juice of 1 lemon
- 1 teaspoon salt
- extra hot sauce or black pepper to taste
- Mix together
With the chips made and the salsa gettin' it's groove on, it was time to make things happen. I loaded the sheet pan up with all the chips, sprinkled on more of the spices and really layered on cheddar and jack cheese. Baked for about 5 minutes and that gooey, crunchy goodness was ready!! Those two boys 'bout fell over!! My glow is growing brighter....hee hee. I finished the tray off with the salsa and some sour cream. I think they are still in the kitchen eating cause I don't hear anything...glowing again. I'm tickled about this easy, quick afternoon snack for the boys and I had all the ingredients on hand! I hope you give it a try....you might just start to glow too.
